This is some of the last days of my vacation. It has been a very restful time,and gave me a chance to catch up on some housework. I have enjoyed cooking this last week,and haven't felt like I was in a rush to get something on the table to eat. Here is the menu for this week:
Breakfasts:
Cereal
Eggs & bacon
Smoothies
yogurt & fruit
Lunches:
Usually leftovers, or sammies
Supper/Dinner:
Monday: Roasted Chicken, Sweet Potatoes, Salad, Fresh Pineapple,Choc Cake
Tuesday: Crockpot Ham & Beans, Cornbread
Wednesday: Chicken & Noodles,Mashed Potatoes, Veggie
Thursday: Breakfast for Dinner, Oat Pancakes (Recipe to follow), bacon, eggs
Friday: Tacos with trimmings
Saturday: Crockpot Cranberry Porkchops (From $5 Dinners Cookbook), Sweet Potatoes, Cabbage, green beans
Sunday: Lasagna (stouffers) & Salad
Oat pancakes
(Gluten Free and delicious!) Start the night before!
Ingredients:
2 cups oat flour
2 cups of buttermilk, yogurt or sour cream
1 tsp. baking soda (sodium bicarbonate)
1/2 tsp. sea salt
1/4 melted butter (can use as little as 2 Tblsp butter)
2 large eggs
1 tsp. vanilla extract or scrapings from a half a vanilla bean
water for thinning
Directions:
Mix oat flour and buttermilk and let sit in warm place over night.
Stir in all other ingredients. Add water to make desired consistency.
Cook on hot oiled griddle or cast iron skillet.
Some recipes say you can mix the whole thing together the day before and let sit in refrigerator for 12-24 hours. I have not tried it that way.

A Honey Of A Quilt Show!
Today is the last day of the quilt show. We are having a great time, and the resort that the show is being held at is GORGEOUS! Hubby and I have never been here. I think we will be making a bit of a pilgrimage up here for some "us" time. The resort is right on the edge of Rathbun Lake, and has some beautiful scenery.

Spring is how many days away?
It is cold tonite! Or, rather I am. Made a pot of goulash tonite, kind of an improvised stove top lasagna. It was good with some salad.
I need to do an inventory of my cupboards and see what supplies (food) we have on hand. I do have my menu made out for the week. I am just posting suppers this week. Breakfasts are usually a pick of the normal things, and lunch varies greatly from left-overs to making something for sammies,and all that lies in between. So hear you go:
Breakfasts: eggs, bacon, pancakes, french toast, cereals(still have alot of that), smoothies,etc.
Lunches: Sammies, left-overs, fruits/veggies.
Suppers/Dinners: (will rotate around)
Turkey stirfry with rice
Breakfast for supper (Oatmeal Pancakes,eggs, bacon)
Turkey and noodles with mashed Potatoes
Hamburgers and Fries
Chicken Tortilla Soup
Beans & Cornbread
Chicken Broccoli Curry Casserole, Sw. Pototoes
Will include veggies in this, but like to be a little spontaneous with that part.

Under The Weather......
Feeling a little sickly today. I suppose it is a drawback from my career choice of being an RN. Felt fine this morning. Then as I was cleaning a closet, I started getting a bit of nausea. Rested Slept most of day, and menu choices went out the window in leu of takeout pizza that hubby brought home. Oh well, there is always tomorrow! Later Gators!

Ahhhhhhhhhhh!! A Nite Off!
Came home from work this morning.....the weather as of late has been warming, so with that comes melting, and with that comes MUD! I detest mud, but it is a sign of spring, so I will deal with it. Got home, fixed the hubs breakfast, and looked for myself something to eat. Found nothing appealing, so I headed to my bed with the electric blanket---what a wonderful invention! (smiles)
Awoke this evening (I require a lot of sleep it seems), and viewed my menu plan to see what was on it. Well, it seems Bill & I had decided on this dish, but upon looking at my printed recipe I neglected to purchase some of the ingredients--like Bisquick! So, I looked on one of my fav recipe sites, and found a recipe that was close, but did I want to go to that much trouble? *still kinda tired* Well, I decided to take the easy way out, and we really don't need the added calories of breading--right?--so I cooked my talapia in a skillet sprayed with PAM. Of all the fish in the world, I believe talapia is one of my favs. With it, we had roasted potato strips, green beans, and spinach. Two veggies because hubby with rather eat nothing than have to eat green beans, and son is just the opposite. Dessert was brownies that I had made a couple of days ago. Yummy!
Just wanted to share the rest of my meal plan this week:

Breakfast: Cereal (need to whittle the mass amount of cereal I have gotten. Got a little carried away with great sales & coupons a few months ago)
Lunch: Tuna Salad Sammies
Supper: BBQ Chicken Pizza
Friday
Breakfast: Overnight Blueberry French Toast
Lunch: Out
Supper: Out
Saturday
Breakfast:Sausage Casserole/Roasted Oven Fries
Lunch: Leftovers
Supper: Spaghetti with French Bread/rolls, & Salad
Sunday
Breakfast: Smoothies, Breakfast Burritos
(I will be making these fresh, and adding potatoes)
Lunch: Left over Spaghetti
Supper: Chicken Casserole (Subbing chicken in place of ham in this recipe)--I will edit this post when i find the recipe!

Breakfast: Smoothie, PBJ Sandwich, Leftovers if any from last 2 breakfasts
Lunch: Left over Chicken Casserole
Supper: Lasagna Skillet with broccoli

Where did I leave my quilting groove?
Do you ever just not feel like doing anything? I want to quilt, piece, craft, but I can't find the "groove" or mojo to do it. I don't know where I lost it, or left it. What do you do when you find yourself in my shoes--instead of walk in them--LOL.
I don't want to have to PUSH myself to do those things. I know I would just resent it then--kinda like dishes in the sink that need to be done. I truly love quilting, and all those things that encompass it. Please help me find it!

Back In The Saddle Again!
Again, it has been way too long. It is a COLD day here in Northern Missouri. I used to "wish" for this weather---What Was I Think'in? I am still working my nite job, and at the store when I can be. Haven't done alot of sewing recently, but my plans are to change that very soon. In March, the store is vendoring at "Honey Creek Resort" on the19th & 20th. The Centerville, IA,guild has a quilt show, and we didnt get to vendor last year. So mom and I are pretty excited about it.
Health wise, the family is doing ok. Bill is staying healthy this year so far. I was admitted to the hospital with Chest pain on Christmas Eve--I know,what a way to spend the Holiday--but it subsided, and there was no damage to my heart, so I am very blessed. The kids are doing great--Ashley is still in KC, and for the moment Jerad is living at home.
I did just recently get the quilt shoppe on facebook,so look up "Stitch-N-Tyme" and like us so you get all the news happening there. Still working on getting it online sometime soon, so watch for that announcement there.
Miss all my online buddies, hope to reconnect with some of you in person someday.

Operation Christmas Child
I just LOVE, LOVE being involved in Operation Christmas Child. I haven't been doing this for a couple of years, but love the message of this ministry. My husband and I will definately be doing it this year!
