Meal Plan Monday 04/25/2011

This is some of the last days of my vacation. It has been a very restful time,and gave me a chance to catch up on some housework. I have enjoyed cooking this last week,and haven't felt like I was in a rush to get something on the table to eat. Here is the menu for this week:

Breakfasts:
Cereal
Eggs & bacon
Smoothies
yogurt & fruit

Lunches:
Usually leftovers, or sammies

Supper/Dinner:
Monday: Roasted Chicken, Sweet Potatoes, Salad, Fresh Pineapple,Choc Cake
Tuesday: Crockpot Ham & Beans, Cornbread
Wednesday: Chicken & Noodles,Mashed Potatoes, Veggie
Thursday: Breakfast for Dinner, Oat Pancakes (Recipe to follow), bacon, eggs
Friday: Tacos with trimmings
Saturday: Crockpot Cranberry Porkchops (From $5 Dinners Cookbook), Sweet Potatoes, Cabbage, green beans
Sunday: Lasagna (stouffers) & Salad

Oat pancakes
(Gluten Free and delicious!) Start the night before!

Ingredients:

2 cups oat flour
2 cups of buttermilk, yogurt or sour cream

1 tsp. baking soda (sodium bicarbonate)
1/2 tsp. sea salt
1/4 melted butter (can use as little as 2 Tblsp butter)
2 large eggs
1 tsp. vanilla extract or scrapings from a half a vanilla bean
water for thinning

Directions:

Mix oat flour and buttermilk and let sit in warm place over night.

Stir in all other ingredients. Add water to make desired consistency.

Cook on hot oiled griddle or cast iron skillet.

Some recipes say you can mix the whole thing together the day before and let sit in refrigerator for 12-24 hours. I have not tried it that way.

A Honey Of A Quilt Show!



Today is the last day of the quilt show. We are having a great time, and the resort that the show is being held at is GORGEOUS! Hubby and I have never been here. I think we will be making a bit of a pilgrimage up here for some "us" time. The resort is right on the edge of Rathbun Lake, and has some beautiful scenery.
If you missed the show, maybe you can think about coming next year. Have a GREAT SUNDAY!

Spring is how many days away?



It is cold tonite! Or, rather I am. Made a pot of goulash tonite, kind of an improvised stove top lasagna. It was good with some salad.
I need to do an inventory of my cupboards and see what supplies (food) we have on hand. I do have my menu made out for the week. I am just posting suppers this week. Breakfasts are usually a pick of the normal things, and lunch varies greatly from left-overs to making something for sammies,and all that lies in between. So hear you go:

Breakfasts: eggs, bacon, pancakes, french toast, cereals(still have alot of that), smoothies,etc.
Lunches: Sammies, left-overs, fruits/veggies.
Suppers/Dinners: (will rotate around)
Turkey stirfry with rice
Breakfast for supper (Oatmeal Pancakes,eggs, bacon)
Turkey and noodles with mashed Potatoes
Hamburgers and Fries
Chicken Tortilla Soup
Beans & Cornbread
Chicken Broccoli Curry Casserole, Sw. Pototoes

Will include veggies in this, but like to be a little spontaneous with that part.

Under The Weather......

Feeling a little sickly today. I suppose it is a drawback from my career choice of being an RN. Felt fine this morning. Then as I was cleaning a closet, I started getting a bit of nausea. Rested Slept most of day, and menu choices went out the window in leu of takeout pizza that hubby brought home. Oh well, there is always tomorrow! Later Gators!

Ahhhhhhhhhhh!! A Nite Off!

Came home from work this morning.....the weather as of late has been warming, so with that comes melting, and with that comes MUD! I detest mud, but it is a sign of spring, so I will deal with it. Got home, fixed the hubs breakfast, and looked for myself something to eat. Found nothing appealing, so I headed to my bed with the electric blanket---what a wonderful invention! (smiles)
Awoke this evening (I require a lot of sleep it seems), and viewed my menu plan to see what was on it. Well, it seems Bill & I had decided on this dish, but upon looking at my printed recipe I neglected to purchase some of the ingredients--like Bisquick! So, I looked on one of my fav recipe sites, and found a recipe that was close, but did I want to go to that much trouble? *still kinda tired* Well, I decided to take the easy way out, and we really don't need the added calories of breading--right?--so I cooked my talapia in a skillet sprayed with PAM. Of all the fish in the world, I believe talapia is one of my favs. With it, we had roasted potato strips, green beans, and spinach. Two veggies because hubby with rather eat nothing than have to eat green beans, and son is just the opposite. Dessert was brownies that I had made a couple of days ago. Yummy!
Just wanted to share the rest of my meal plan this week:
Thursday
Breakfast: Cereal (need to whittle the mass amount of cereal I have gotten. Got a little carried away with great sales & coupons a few months ago)
Lunch: Tuna Salad Sammies
Supper: BBQ Chicken Pizza
Friday
Breakfast: Overnight Blueberry French Toast
Lunch: Out
Supper: Out
Saturday
Breakfast:Sausage Casserole/Roasted Oven Fries
Lunch: Leftovers
Supper: Spaghetti with French Bread/rolls, & Salad
Sunday
Breakfast: Smoothies, Breakfast Burritos
(I will be making these fresh, and adding potatoes)
Lunch: Left over Spaghetti
Supper: Chicken Casserole (Subbing chicken in place of ham in this recipe)--I will edit this post when i find the recipe!
Monday
Breakfast: Smoothie, PBJ Sandwich, Leftovers if any from last 2 breakfasts
Lunch: Left over Chicken Casserole
Supper: Lasagna Skillet with broccoli

Where did I leave my quilting groove?

Do you ever just not feel like doing anything? I want to quilt, piece, craft, but I can't find the "groove" or mojo to do it. I don't know where I lost it, or left it. What do you do when you find yourself in my shoes--instead of walk in them--LOL.
I don't want to have to PUSH myself to do those things. I know I would just resent it then--kinda like dishes in the sink that need to be done. I truly love quilting, and all those things that encompass it. Please help me find it!

Back In The Saddle Again!

Again, it has been way too long. It is a COLD day here in Northern Missouri. I used to "wish" for this weather---What Was I Think'in? I am still working my nite job, and at the store when I can be. Haven't done alot of sewing recently, but my plans are to change that very soon. In March, the store is vendoring at "Honey Creek Resort" on the19th & 20th. The Centerville, IA,guild has a quilt show, and we didnt get to vendor last year. So mom and I are pretty excited about it.
Health wise, the family is doing ok. Bill is staying healthy this year so far. I was admitted to the hospital with Chest pain on Christmas Eve--I know,what a way to spend the Holiday--but it subsided, and there was no damage to my heart, so I am very blessed. The kids are doing great--Ashley is still in KC, and for the moment Jerad is living at home.
I did just recently get the quilt shoppe on facebook,so look up "Stitch-N-Tyme" and like us so you get all the news happening there. Still working on getting it online sometime soon, so watch for that announcement there.
Miss all my online buddies, hope to reconnect with some of you in person someday.

Operation Christmas Child

I just LOVE, LOVE being involved in Operation Christmas Child. I haven't been doing this for a couple of years, but love the message of this ministry. My husband and I will definately be doing it this year!

Home-Home On The Range...



Ok, I don't live on a range, but it is good to be home again. Went to a retreat in Camby, Indiana this last week and weekend. Did get a few projects done, and almost done. The best thing about quilting retreat is touching base with all your friends! Christi was my room mate--hope i didnt snore to loud! Robin, and Vicki sat next to me--I tried not to be a table hog--LOL!
I got my raggedy ann pincushions done. It is a free pattern on the net. As soon as I can figure out who i got it from and get another done for me, I will post.
Also got some goodies, but am at my parents posting and doing some laundry (water pipes leaking----argggggghhhhh!)

August Already???

Where in the world did July go? Hubby did have a second MI (heart attack) the middle of July. His stent that was placed in March was already 70% blocked so they said bypass was the only option at this time. So last Tuesday he had a triple bypass. He is in the hospital where I work, and is gaining strength everyday. They say he may get to come home Monday. I feel very blessed to still have him here, and never so scared in my life than those moments that he was in surgery. Now, I just need to get back to the normalcy of life--whatever that is? I dont quite remember--LOL.

If you have been trying to reach me via email, my computer access was shut off by hubby and I in early July. Son had wedding cancelled, and we did not like to have to read some of his things he was posting on the web, so we pulled the plug for lack of better words. Things are looking better for him--finishing school in the fall, and he got a job--starts monday! Yippee! Hope to have internet again soon tho.

Quilting & Scrapbooking

I can't help it, I am in love with them both! Just recently, a few friends helped me rekindle my love for cardmaking, scrapbooking, papercrafting. Never fail tho, my first love is quilting and always will be.
I find it facinating that some of the designers of fabrics, are also scrapbook paper/crafting designers also. What a small world. Some that I have seen are Heather Bailey, and Basic Grey! Well, seems I am in good company.
Want to tell you about a scrapbooking blog I have been logging into recently--Keepsakes By Melissa. She is a great designer of cards.
I went to Micheals today on my way home from my college boy. I just love that place, and love the remodeling they have done (I haven't been to this particular one for over a year). I perused the sale items, and came home with quite a bunch. The thing is, I go back down that way in about a week and a half! I did some lookie looing, and will be getting some other things then.
I would like to get a cricut, but not sure which i should get. For any of you scrapbookers out there, what is the best one for my buck(s). The saleslady at Micheals told me to wait and get it with a % off coupon, so signed up for those too today. Ahhhhhhhhhhhhhhhh! I cant wait till I get my paradise, I mean craft room, done! It will be a scrapbooking and quilting heaven.

Baby It's Cold Outside!


Brrrrrrrrrrrrrrrrr!
That is all I can say. Seems hubby and I live in an ice belt! When we dont get snow, we then get ice. I wouldn't mind it if I could stay inside all day. But, a girl has to work! Doggies even think it is cold. I have to shoo them outside to take care of their business. Just remember.........weenie dogs do not like the cold! Any kind of cold! LOL.

Today I worked with mom at the Quilt Shop! I finally got to venture out after the storm. We had fun. I finished up some gifts, and some orders we had to make, and kits to get together. Also, getting ready for my first beginners class. This is going to be so much fun! Calling it "Quilting 101". The evening class is full, and the day class is half full! The gals that have signed up are really excited! With my job changing, this is going to be a fun time! We are going to make a sampler quilt, and learn some basics before we begin! I love to teach quilting--I guess it is because it's my passion.

Hubby is watching some crazy sci fi movie! Whatever keeps him entertained I guess.
I need to get busy and sew on the binding on another little quilt. I should be done with it tonite, or get up a bit early tomorrow and finish the hand sewing then.

I am getting excited! Dh and I plan to go shopping tomorrow evening, but it is suppose to snow again tonite an sleet tomorrow! UggggH! Work tomorrow at my real job, and then the next day too. Off Christmas, and then back to work on the 26th--YIPPEE--NOT! I do get the weekend off. Thought I would share some photos of some things I have made in the Christmas' in the past. A little eye candy to get the creative juices flowing.

5 days till Christmas!!!

Wow, what a few days it has been since I have posted! Whew! I have been busy at the Quilt Shoppe! Did some classes there this month. It was so much fun. We made a prim ornie that I developed a couple of years ago! And, a Stocking Snowman Pin that I had recieved as a gift a few years ago. The gals sure enjoyed them.
Things have changed on the job front too. I have been an Infection Control Nurse/Employee Health Nurse/Staff Education Development Coord. for the past 2½ years. With the Quilt Shop being opened now, the job and my duties at the shop have taken a toll on me. Oh, I was also taking call a week during the month. So, I have given up the desk job, and am going back to the floor for a while. My wish is to go full time at the shoppe sometime soon, but that will be awhile. It will be so much better to only work 3 twelve hour shifts, then to work 5 full time days at the desk job. I am happy about my decision, and hope that this will give me the opportunity to design more too.

The house is decorated-------well mostly. College boy came up the other nite (late-during an ice storm), and he has been stuck here for a couple of days. I dont mind at all, but I think he is getting bored. Nice to have college boy home for a few days. I miss him, and so does his father.

I did not make any of my christmas gifts this year. I feel very sad about that, as I love to do that. But, with the opening of the quilt shop and working full time at another job, it just didnt happen. Starting the new year tho, I am going gang busters on making my gifts for next year.

Quilt Politics?



I was over at Pickledishquilts the other day and found this cartoon! Isn't it so appropriate for the upcoming elections. Ok, that is all I am saying about politics!

Had a kinda good week. Found out we don't get our building for the quilt shoppe until October 31! This is a bit frustrating, but what is starting a quilt shoppe without a few frustrations. We will be opening on November 7, 2008! We are excited about that, but wanted time to make some changes before opening. Well, the show must go on as they say. Lots of fabric coming weekly!

Work has had its trials this week also. But what doesn't kill you only makes you stronger right? Well, I at least have part of my backside left! I pray for the day when the only "work" I have is in my quilt shoppe! Pray for me please!

Ford Hubby and Ford son are home for tonite. They leave again tomorrow. I miss them when they are gone. The doggies keep me company, or is it the other way around?

I head out this coming Wednesday for the Des Moines APQS show! Yeehaw! I am sharing a hotel room with a couple of other gals! I can't wait to go and see the quilts, and what is new and "HOT" in the quilt world. Oh, and I will love the vendors. I will let you know when I return what goodies I got! One of the gals and I are going to see Mark Lapinski(sp?)on Friday nite! I have heard he is a hoot. Can't wait to see for myself!
